Recipe: Homemade Sushi

Homemade Sushi is so much cheaper than at the restaurant. Sushi is easy and fun to make at home, and you can put all your favourite ingredients into your perfect custom roll. You can also pull the kids away from the tablets and smartphones and get cracking in the kitchen with this kid-friendly sushi recipe.


MAIN INGREDIENTS
Small bamboo matt
2 square nori sheets
1 cup rice
1 1/2 cups water
1 Tbsp vinegar
1 Tbsp sugar or mirin
1 egg
1 tsp sugar or mirin
prawn meat
Japanese sushi tofu skins
Cucumber sticks
Crab sticks


METHOD

1. Rinse the rice and add the water to cook the rice. Once cooked, fluff it and let it cool. Add the vinegar and sugar and mix evenly until the sugar has dissolved.
2. To make the tamago egg, add the sugar/mirin into the beaten egg. Gently pan-fry into an omelette. Let it cool completely before rolling and cut into rolled slices.
3. Cut each nori sheet into half. Place a half sheet onto the bamboo matt. Scoop some cooled sushi rice onto the nori sheet, and top with some cucumber sticks. Roll up the bamboo matt tightly and press gently but firmly. Cut the sushi roll into bite size pieces. Repeat with the other sheets.
4. To make the tofu sushi, scoop a tablespoon of rice and gently shape into an oblong piece to stuff into each tofu skin. For the shrimp sushi, simply press gently a slice of flattened cooked shrimp onto pieces of shaped rice.
5. Serve with some pickled ginger and sushi soy sauce.
