KUCHING: A special dish and a ‘must have’ during the month of Ramadan is the Sotong Tutok. Sotong Tutok, the term which means dried hammered cuttlefish, is a local favorite during the fasting month.

Here, a vendor was selling his special dried cuttlefish at the Satok Ramadan Bazaar yesterday. Salim has been selling the dried cuttlefish for more than 15 years.

The 59-year old said that each time when there were stalls for rent by the Kuching North City Commission (DBKU) during the fasting month, he would take the opportunity to sell his special dried cuttlefish. The process of making it is very easy, but to make it tastes good, you must have the passion to do it.

And only then will customers keep coming back, wanting for more, he said. He explained that in the process of making it, he would first grill the dried cuttlefish over charcoal, rolled it, and then carefully hammer it until it is flattened and soft.

Each piece of dried cuttlefish ranges from RM12 to RM20, depending on its size, he said. Not only that, Salim also makes his own sauce, Sambal Kicap. Each bottle is priced at RM11.
